This versatile fruit salad made with nectarines, blueberries and mozzarella, is perfect for lunch, as complement to dinner, or as a party dish. The sweet nectarines are perfectly balanced by the creamy mozzarella, making this a refreshing fruit salad with substance.
- 2 nectarines, cubed
- 1 pint of blueberries
- 1-2 containers of fresh mozzarella balls (I prefer Ciliegine sized, but any size works)
- 1 tablespoon fresh basil, finely chopped
- Olive oil
- 1/4 preserved lemon, julienned
Mix fruit, mozzarella and basil together in a bowl. Drizzle with olive oil. Toss to coat. For extra brightness, garnish with a few pieces of preserved lemon. Enjoy!
